For the Donut Dough:
- 2 ½ cups (315g) all-purpose flour
- 2 tbsp granulated sugar
- 1 packet (2 ¼ tsp) active dry yeast
- ½ tsp salt
- ½ cup whole milk, warmed
- 2 tbsp unsalted butter, melted
- 1 large egg
- ½ tsp vanilla extract
- Vegetable oil (for frying)
For the Vanilla Bean Custard Filling:
- 1 ½ cups whole milk
- ½ cup heavy cream
- ½ cup granulated sugar
- 3 egg yolks
- 2 tbsp cornstarch
- 1 vanilla bean (or 2 tsp vanilla bean paste)
- 2 tbsp unsalted butter
For the Caramelized Sugar Topping:
- ½ cup granulated sugar
- Kitchen torch (for brûlée effect)
Instructions
Step 1: Make the Dough
- In a small bowl, mix the warm milk, sugar, and yeast. Let sit for 5 minutes until frothy.
- In a large bowl, combine flour and salt. Add the yeast mixture, melted butter, egg, and vanilla extract. Mix until a dough forms.
- Knead for about 8 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let it rise for 1 hour or until doubled in size.
Step 2: Shape and Fry the Donuts
- Roll out the dough to ½-inch thickness and cut into rounds (about 3 inches wide).
- Place the cut dough on a lined baking sheet, cover, and let them rest for 30 minutes.
- Heat vegetable oil in a deep pan to 350°F (175°C). Fry the donuts for about 2 minutes per side until golden brown. Drain on a wire rack.
Step 3: Prepare the Vanilla Bean Custard
- In a saucepan, heat milk and heavy cream with the vanilla bean. Simmer, then remove from heat.
- In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly whisk in the warm milk mixture.
- Return to heat, stirring constantly until thickened. Remove from heat and stir in butter.
- Let the custard cool, then transfer to a piping bag.
Step 4: Fill and Brûlée the Donuts
- Poke a hole in each donut and fill with vanilla custard.
- Sprinkle the tops with granulated sugar and caramelize with a kitchen torch until golden and crisp.
Notes
- No Kitchen Torch? Broil the donuts for 30 seconds until the sugar melts.
- Make-Ahead: Custard can be made a day ahead and stored in the fridge.
- Filling Ideas: Swap vanilla for chocolate or coffee custard for a twist.
